Yatoshi knives are made with 7CR17 steel, which offers an excellent balance of sharp edge retention and durability and has significantly more carbon content than other “premium” knives.

Unique Sloped Bolster

Our unique sloped bolster pulls double duty: the sloped shape encourages a proper “pinch grip” for comfort and control, while the bolster’s placement creates better access to the full length of the blade.

15° Blade Angles

While most Western-style knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.

We wanted to design something special that brings us so much joy in our day-to-day lives. The focus was on how we could add a bit more personality to our everyday kitchen.
